3 oz Prosecco Brut
2 oz Aperol
1 oz Sparkling Water
Add all ingredients to a red wine glass, add 4-5 pieces of medium cubed ice, and stir.
Garnish: Orange or Lemon Wheel
Notes: For more Amaro flavor increase Aperol to 2.25 oz. This helps fight dilution.
Straits Sling
2 oz Gin
.5 oz Kirschwasser (or clear cherry liqueur)
.5 oz Benedictine
.5 oz Lemon Juice
2 dashes Angostura Bitters
2 dashes Orange Bitters
1 oz Soda Water
Shake everything except soda with ice, strain into champagne flute, stir in soda water.
Singapore Sling (Raffles Traditional)
1.5 oz London Dry Gin
.5 oz Cherry Heering
.25 oz Benedictine
.25 oz Triple Sec
1.5 oz Pineapple Juice
.5 Lime Juice
1 bar spoon Grenadine
2 dashes Angostura Bitters
Shake everything with ice and strain into a tall Collins or footed pilsner glass filled with cubed ice.
Garnish: Orange wheel, pineapple wedge, Cherry, umbrella.
Wray & Ting
1.5 oz Wray & Nephew White Overproof Rum
4 oz Ting (Jamaican Grapefruit Soda)
Pour both ingredients into a rocks glass or 10 oz Collins glass, fill with cubed ice, and gently stir.
Garnish with a lime wedge.
Notes: It’s optional to squeeze the lime wedge into the drink and drop it in. Both ways are acceptable depending preference.
Bungalow Mango Margarita (Original)
Leaving the skin on, cut a large slice of fresh mango. Place skin side down in the bottom of a shaker. Muddle till the meat is a mushy pulp. Add:
1 oz Fresh Squeezed Lime Juice
.75 oz Triple Sec
.25 oz Organic Agave Nectar
2 oz Tequila Blanco
Add ice to shaker, enough to top of liquid, and shake. Pour entire contents, including mango skin, into rocks glass.
Garnish: Lime Wheel or Wedge
Notes: I was living in my one bedroom bungalow downtown Nashville when I rediscovered my love for the tropics. Basically, because I missed home. During my personal renaissance, my front porch facing the pool and decked out like a beach shack bar, I would follow up my meal of black beans and rice with a mango and my favorite cocktail - Margarita. It wouldn’t be till years later I combined these magnificent muses into one.
Paloma (Fresh)
2 oz Tequila Reposado
1 oz Grapefruit Juice
.5 oz Lime Juice
1 tsp Agave Syrup
4 oz Topo Chico
pinch of salt
Add all ingredients, including salt, directly into a double rocks, collins, or pilsner glass, fill with ice and stir. Garnish with mint, lime wheel and pineapple chunk.
Paloma
1.5 oz Tequila Reposado

3 oz Jarritos Grapefruit Soda
Pinch of Salt
Add all ingredients, including salt, directly into a double rocks, collins, or pilsner glass, fill with ice and stir.
Cuba Libre
2 oz Aged Light (or Amber) Rum
.5 oz Lime Juice
4 oz Real Sugar Coca-Cola
Shake rum and lime juice with ice. Strain into glass. Fill glass with ice and stir in cola.
Glassware: Gibraltar Rocks Glass, Pilsner Glass
Garnish: Lime wheel or wedge
Hurricane
4 oz Dark Jamaica Rum
2 oz Passion Fruit Syrup
2 oz Lemon Juice
Shake all ingredients with 1 cup ice. Pour unstrained into Hurricane Glass. Top with ice as needed.
Garnish: Lemon Wheel and Cherry on Skewer.
Margarita
2 oz Blanco Tequila (100% Blue Agave)
1 oz Lime Juice
.75 oz Triple Sec
Shake all ingredients with ice and pour entire contents into a rocks glass.
Garnish: Lime Wedge on the rim
For a sweeter touch add 1 tsp Agave Nectar
'Ti Punch
2 oz Rhum Agricole Blanc
1 tsp Canne Sirop
Lime Coin
Add rum and sirop to a rocks glass. Squeeze lime coin into glass and set aside. Swizzle gently. Drop lime coin in.
Planter's Punch
1.5 oz Dark Jamaica Rum
1 oz Unsweetened Pineapple Juice
1 oz Orange Juice
.5 oz Lemon Juice
1 tsp Grenadine
1 tsp Simple Syrup
2 dashes Angostura Bitters
Shake all ingredients except bitters with ice. Pour into double rocks glass or tiki mug.
Garnish: Mint Sprig, assorted fruit on skewer
Blue Hawaii
.75 Vodka
.75 Light Puerto Rico Rum
3 oz Pineapple Juice
1 oz Sweet & Sour Mix
.5 oz Blue Curacao
Add all ingredients to a Hurricane glass. Fill glass with ice. Stir gently till blue dissolves throughout. Garnish with pineapple slice and orchid flower.
Mojito
1.5 oz Light Rum
2 bar spoons Raw Cane Sugar
.75 Lime Juice
10-12 Mint Leaves attached to sprigs
Sparkling Mineral Water
Collins Glass (10 oz)
Place mint, sugar, and lime juice in Collins glass. Muddle to express mint into sugar lime mix, but not chopping mint. Pour in about 2 oz sparkling water and stir till sugar dissolves. Add rum. Fill glass with medium cube ice. Top with sparkling water.
Garnish: Mint Sprigs
La Floridita Daiquiri
1.5 oz Aged Light Rum
.75 oz Lime Juice
1 tsp Maraschino Liqueur
1 tsp Simple Syrup
1 cup- Ice
Blend all ingredients in blender, pour into martini glass or large coup.
Hemingway Daiquiri
2 oz Light Rum
1 oz Grapefruit Juice
.5 oz Lime Juice
.5- Simple Syrup
Shake all ingredients with ice and double strain into coup glass.
